Default Nickel plated ejector and sear spring

Would a P.08 ejector and sear spring not function properly if it has heen nickel plated? I have recently seen a nickel plated Luger that had its sear spring and ejector plated just like the rest of the pistol.

Since electroplating doesn't involve heat, it's OK. You'd have to exceed the temperature to which a particular part was drawn down to after hardening--to establish its specific hardness and temper--to affect it.

I'm not sure about nickel plating, but parts that have been chromed my have tolerence issues. When we designed parts that were to be chromed we had to allow for the chrome's thickness.

Nickle or chrome plated lugers will work - usually without problems.
The plating would have no impact on the springs mentioned.

Chrome or nickel plating is more brittle than the basic steel, which is flexible. The plating may crack and flake off with use.
